We roast in fresh batches twice a month, then rest each batch 7 to 10 days, depending on roast level, before it's ready to sell. Freshly roasted coffee is still releasing CO2, which throws off extraction and can make even great coffee taste flat or uneven. Resting lets that gas escape so what you brew is clean, balanced, and actually at its best. Orders ship within 1 to 2 business days via standard carriers.
